Recipe Ingredients:
- Peanut butter (aka Groundnut paste)
- Spinach – cut or sliced
- Mushrooms – cut or sliced
- Tomatoes
- Black eye peas: Cook this separately and gently on low heat for 3-4 hours to preserve as much flavor as possible. Ensure that there is a small amount of water on top of the layer of beans during cooking.
- Water
- Salt
- Vegetables – any
- Okra
- Onion
- Tofu
Recipe:
- Put about 2 cups of water in cooking pan or vessel.
- Put on stove or hot plate and put to low heat.
- Add cut onions and let simmer for 5 to 10 minutes.
- Add cut mushrooms, sliced.
- Add vegetables (cut into smaller pieces):
- Cook on low heat for about 45 minutes.
- Add about 3 to 4 more cups of water.
- Continue cooking and add tomatoes, sliced, or paste, if desired.
- Add sliced vegetables, okra, etc. cut into smaller pieces.
- Add black eye peas (precooked).
- Add peanut butter (or groundnuts paste) (5 tablespoonful)
- Cook for an additional 2 hours under low heat.
- Leave to cook to room temperature (25 C)
- Enjoy with rice balls, yams, kenkey (corn meal), plantain (green or ripe), etc. Or fry ripe plantain and enjoy to your hearts content. Bon Appetit!
