Vegetarian Peanut Butter (or Groundnut paste) Soup – Ghana

Recipe Ingredients:

  1. Peanut butter (aka Groundnut paste)
  2. Spinach – cut or sliced
  3. Mushrooms – cut or  sliced
  4. Tomatoes
  5. Black eye peas: Cook this separately and gently on low heat for 3-4 hours to preserve as much flavor as possible. Ensure that there is a small amount of water on top of the layer of beans during cooking.
  6. Water
  7. Salt
  8. Vegetables – any
  9. Okra
  10. Onion
  11. Tofu

Recipe:

  1. Put about 2 cups of water in cooking pan or vessel.
  2. Put on stove or hot plate and put to low heat.
  3. Add cut onions and let simmer for 5 to 10 minutes.
  4. Add cut mushrooms, sliced.
  5. Add vegetables (cut into smaller pieces):
  6. Cook on low heat for about 45 minutes.
  7. Add about 3 to 4 more cups of water.
  8. Continue cooking and add tomatoes, sliced, or paste, if desired.
  9. Add sliced vegetables, okra, etc. cut into smaller pieces.
  10. Add black eye peas (precooked).
  11. Add peanut butter (or groundnuts paste) (5 tablespoonful)
  12. Cook for an additional 2 hours under low heat.
  13. Leave to cook to room temperature (25 C)
  14. Enjoy with rice balls, yams, kenkey (corn meal), plantain (green or ripe), etc.  Or fry ripe plantain and enjoy to your hearts content. Bon Appetit!
